When you choose the Trash category you will see all the mail which you have deleted, and you will observe that the File button in the middle section of the Ezian mailbox has changed and is now an Undelete button.

To restore previously deleted email, select the email you wish to restore and click the Undelete button.  The email is removed from the Trash mailbox category and is now shown in the Unfiled category.
To permanently delete email  select mail to be deleted and click the Delete button.  Because you might have clicked in error and this Delete is irrevocable you are asked to confirm the deletion.

Making multiple selections for Delete or Undelete

When permanently deleting email it is often helpful to employ multiple selection techniques so that you can delete several selected emails. or all email, in the Trash mailbox category.

How to make multiple selections in the Mailbox

This mechanism is the same for all categories of the Mailbox, but particularly useful in the Trash category for cleaning house.

How to make  multiple individual selections
Use Ctrl Left Click to select several emails for Delete or undelete.  Hold down the Ctrl key then with the mouse cursor move to point at any other individual email you wish to select at the same time as others.   Left click will then highlight and any earlier selections remain highlighted.  Continue to hold down the Ctrl key while you repeat this process and multiple choices will show highlighted. Clicking the Delete or Undelete buttons will then act for all selected emails.

How to select a range
Use Shift  Left Click to select a range of emails. First with Left Click highlight one email at either end of the group you wish to select, then while holding  down the Shift key, move the mouse cursor to the end of the range to be selected and then Left Click.  The range you described will be highlighted. Clicking the Delete or Undelete buttons will then act for all selected emails.
