This is the name which you selected prior to clicking Send on the Ezian opening screen.  Ezian only shows the name from the friends list. The actual email address is remembered by Ezian but is not shown in the "To" section.

If a name was selected which you don't want, then you can backspace out that name.

If you click on the choice "Blank entry" from the main screen then the "To:" input area is blank.

When you click the To button, a menu appears showing the address book, allowing you to add additional names:

To type in an email address that is not in your address book (friends list), you simply type in the email address you are sending to. The format for an email address will be like: FredJ@uvmail.com
